Chicken Salad Sandwiches

This is a great camping meal as well as a good "any-day" meal. It's served cold, so it's easy to make ahead of time and serve up fast for your hungry family. Bulk it up by adding celery in the mix. If desired, try some sweet mix-in options like apple chunks, dried cranberries, or grapes.
Serving size: ½ cup
Servings per recipe: 6
· 4 stalks celery (diced)
· 2 cans chicken (12.5 oz cans, drained)
· ¼ cup plain yogurt
· 2 Tbsp mayonnaise
· 2 tsp mustard
· Salt and pepper to taste
1. Wash and dice the celery stalks. Cut into bite-size pieces.
2. Drain chicken and place in a large mixing bowl. Add celery, yogurt, mayonnaise, and mustard. Salt and pepper to taste. Combine well.
3. Serve chilled on croissants, crackers, bread or plain.
